   I just use the box mix (Zatarans). 

I would too, but I react badly to MSG. I get terrible headaches.

~~1/2 cooking spoon of butter
2 tbsp Creole seasoning
1 cup chopped onion
1 cup chopped bell pepper
1 cup chopped celery
3 cups Andouille sausage
1 lb bed beans
1 tbsp fresh minced garlic
3 bay leaves
1/2 cup parsley
7 cups water
a pinch of black pepper
3 cups rice


Rinse beans well. Fill pot with water, then add onion, bell pepper, celery, garlic, bay leaves and parsley let come to a boil than add creole seasoning when beans start to get soft add Andouille sausage and butter. Season with black pepper. Cook over low heat until the beans are soft and creamy.
Rinse rice in a medium sauce pan. Fill the pot with water or broth. When the rice gets soft, rinse in cold water and let the rice steam on low heat for 10 minutes.

I usually soak my beans overnight, it plumps them up and they cook quicker, but it's not a necessity.  I chop up an onion, green bell pepper, and some celery.  Saute your onion first in either butter or oil, until they start to get translucent.  Then add the bell pepper and celery, and I also add some garlic.  Cook until your veggies are soft.   Add your beans and enough water or chicken stock to cover.  I also chop up my andouille (I use the entire pack) and throw that in because the seasonings from the andouille will help season the beans.  If you have a ham bone, throw that sucker in there too.  I use cajun seasoning to taste.  Just remember, you can always add more seasoning if it needs it, so start out on the lighter side.  I don't use bay leaves, I'm not a fan of them in my beans.  Gumbo, yes.  Red beans, no.  But to each his own.  I also add a couple shakes of Crystal hot sauce (or Tobasco).  Then you let the pot low-simmer on the stove all day while you carry on about your business.  Enjoy!

We use the cream style red beans in gravey and I also chop some smoked sausage in with the beans.  Easy and fast.
