I'm trying to decide which chain gag bit I should buy. I want more bang for my buck but I also want a good product, not something unbalanced or bad quality. So far I've narrowed it down to....

Sorry for so many options! At home we do slow work and practice in a regular chain roper bit, no gag. When running him at at show I'm a little harder handed so I think some gag would be good but he doesn't work too well with a lot of gag
(like a Goosetree
). I'm also thinking about just buying a custom bit from Shallow Creek, L&W Bits, or Carolina Bits.

Depends on what you want to accomplish.
Most that you selected have gag action.
Some of the bits you selected do not have the 1:1 ratio for the purchase and shank
The first Camarillo bit the shanks are swept back more then the purchase allowing for faster contact and release.

I run my gelding in a Rosie gag! Love it! He is very sensitive and will over correct if I handle him even just a tad too much. This bit gives me some forgiveness. and it's the only thing I have found he is more relaxed in. Other bits he chews on. This one he packs really well and barely moves his mouth when riding. But to pick from your list of bits I would try the profchoice derby. I would personally go with less shank. Or equal shank/purchase.

)Something to consider, if you need something more forgiving I wouldn't go with a longer shank
(you get more whoa and lift and quick reaction which will not give you forgiveness in your hands in my opinion.

I really like Dutton bits. For some reason I can't open the link, but I think that the Dutton you listed is the bit I ride my mare in. W have several bits from Dutton and they are all excellent quality.
