 So, we usually pack lunch meat sandwiches for our weekend trips to ropings/barrel races, but my husband said he is "lunch meated out". He's a truck driver and has been really good lately about not eating truck stop food and packing his lunch. But he's burnt out.

Any suggestions on what to take? It's just to a weekend roping. They have concessions; we're just trying to save money. Our fridge is in the shop, so we'll have to use a cooler. That's another issue....things that keep in the cooler without getting nasty. We don't have a grill to take, but we do have a working microwave in the trailer.

I am big on making a crock pot of something like chili or soup.

I prep the crock pot the day before-then at the show let it cook, typically snack all day on veggies/veggie dip, and then for dinner have the crock pot meal-after it cools-store in the cooler-following day put the left overs on a plate and microwave.

Can you prep before you go?  If so I would make taco salad - salad mix or whatever kind of lettuce you prefer, Walla Walla sweet onions (they ARE the best), can of drained black beans, diced tomatoes, sliced olives.  Make your taco meat ahead of time (turkey burger is a great substitute for ground beef if he wants to behave).  Then you can add as much or as little as you want, along with some shredded cheese, tortilla chips,and whatever salad dressing you want.  Makes for a nice light meal but it is filling.  For breakfast since you have a microwave, make breakfast burritos.  I use lean ground sausage (we make our own), Eggland's best eggs (they are low in saturated fat), and hash browns.  You cook it all ahead of time, mix it together and it will keep in an airtight container in a cooler then just scoop into a tortilla, heat in the microwave, add some sour cream and salsa and tada - breakfast is served!

1. Taco Salad. Make meat mixed with Rotel and taco seasoning before you go. Put beans in a container, cheese in a ziploc, etc. Crunch up some Doritos on top.
2. Sausages and potatoes. Grill before you leave with peppers and onions. Heat in the microwave.
3. Egg muffins. Beat one egg per "muffin" with a little milk. Pour into greased muffin tin. Add sausage, diced peppers, onions, shredded cheese to each. Bake about 12 minutes. Pop out while hot and cool. Heat in microwave.
4. Pressed sandwiches. Sliced french bread, hamburger with some spaghetti sauce (pre-made), onions, peppers, mozarella. Put in greased waffle iron. Serve with salad from a bag.
5. Lasagna. Make ahead and cut into slices to heat in microwave.
6. Waffle iron cinnamon rolls. 1 can of Pillsbury cinnamon rolls. Put one roll on each side, press, and wait until crispy. Spread icing on top while hot. (My kids love these to carry around if we are in a hurry).
7. Chicken salad. Bag of salad, pre-cooked chicken breast (they have some with the deli meat or you can make it), add veggies you like and dressing.

I have kept all of this stuff in a cooler for a weekend with no problem as long as I added ice Saturday night.

I have this thing about not eating when I compete (yeah, I know...waaay bad for you) but my husband has gotten me to eat SOMEthing...watermelon. It has lots of nutrients, is refreshing, and hydrates you at the same time. Another non-lunchmeat option is rotisserie chicken sandwich. Just get a chicken, cut pieces off, and make your favorite deli-style sandwich. Works with pork loin or roast beef, too.

Althogh...the taco salads sound awesome, too.

have you tried making chicken salad, tuna salad that kind of thing?? if you have outlets you can always make chili in a crockpot and a pot roast or something to warm up and eat. and those are always filling and keep well and reheat well. I could eat chili for DAYS. yum yum!

is he cold fooded out? I get that way when I eat too many sandwiches and i just want to eat hot food for awhile.

ETA: if you have a microwave, you should get the rotisserie chicken and pre make potatoes. those things wont go bad if it gets a little warm. bring some popcorn? make a stir fry before hand and microwave that up?? All those are very cheap and easy quick options that will be easy for you to take along!

If it is just "lunch meat" that he is tired of.....make meat fillings that you can heat in the microwave.......
I have made BBQ pulled pork, taken grilled hamburgers to be heated, cooked brats in the microwave, etc.....it is still sandwiches but fast and easy!

Great ideas! Thanks everyone. I never would have thought to bring the crockpot. He's also trying to eat healthier, so that presents a challenge too! I think it's just the lunch meat he's sick of.

I texted him some ideas. He said, "whatever, just don't put anything gross in it". Lol. He's picky. No onions. No olives. No celery.

OOH make spaghetti noodles before hand and put them in a tupperware container. then make a spaghetti sauce and you can heat that up in the crock pot too! we let ours cook all day and put fresh veggies and everything in it. then microwave your noodles! that would be nice and yummy! this came to me at like 11:30 last night!

Walking tacos are a fave of ours on the road! A huge plus for me is we can warm up just what we need, and with the prebagged chips, but make what we want, with no dishes to clean. If the chips are against the healthy eating program, grab a package of tortillas maybe?

My second fave are the frozen Steamers. You can veggies, potatoes, pasta.. several options. Make a great side, or even serve as a meal at my trailer!

Crockpots - YES!! I've done a stew, chili, and a lot of those frozen crockpot meals aren't bad either (I readily admit to having forgotten food before we pull out for a rodeo. Quick stop at the nearest supercenter, and VOILA. I keep a crockpot in the LQ). Even roast & potatoes & carrots. Mix it up at home, plug it in when you get there.

If you buy the prebagged salads, you can bring a container of sliced tomatoes. Great by themselves, add to salad, or in walking tacos. Also agree on the watermelon! And we try to throw in a bunch of grapes. LOL anything that can be eaten while riding.

FRUIT SALAD!!! Slice up some strawberries, watermelon, grapes, bananas...mix it in a bowl...great for breakfast or dessert, especially if it's hot.

Another quick and easy - premake chicken alfredo ahead of time. I use the frozen chicken breasts, jar of alfredo sauce, and penne pasta for the noodles. It is thicker and heavier - seems to hold up to being reheated better.

Bacon is great to cook ahead and put in a ziploc baggie, then reheat. If you brought the sliced tomatoes and bagged salad, you have a BLT. Warm it up for breakfast.

Since you don't have a fridge, I might suggest freezing gallon jugs of water (empty a bit out first of course) and placing them along with ice in your cooler. A couple of these will greatly increase the longevity of your bagged ice. Mine easily last all weekend. Plus, when they are almost melted, you have cold drinking water!
