If it was me, I'd keep the good leather, go with a lighter saddle pad and lighter stirrups if you can still keep your feet in them.
Keep in mind also, that bulldogging horses have to run hard, most of them are around 15 hh or shorter, and those boys ain't light. 5-10 lbs is always good to take off, but I wouldn't worry myself sick over it.

I got my saddle in last Wednesday, the CJ C11 I ordered. It is so light! I would say it only weighs 15 to 20lbs. I love it. Very very comfortable and is very good quality. I would recommend them if you are looking for a lightweight saddle.
