 How do I get the oil "out" of the saddle.  It is ruining all my jeans.  I have had it for weeks and ride pretty much every day in it and it is still coming out..............

No suggestions, but I feel your pain. I have a trophy saddle for 2007 that STILL stains jeans.....

Not going to get the oil out, just plan on riding in old jeans for the next year or so. I dont like heavy oiled saddles for that reason. 
What brand of saddle is this?

Just get a bucket (old ice cream bucket works great) of water with a few drops of dawn. Rag, scrub brush, sponge...any will work and just wash it. I usually get a clean bucket of water and go back over to rinse. Let dry. Basically just like doing dishes :) I have never tried this on a new saddle, but I've use it on some really dirty ones and it will get all the dirt and oil off without harming anything. Tough on grease, gentle on hands (or your saddle!) They are usually pretty dry, so I go back and do several light coats of oil painted on with a paint brush. Just in case yours get too dry, but if its that oily it shouldn't! Hopefully it will be just right.

100% Take it outside and hose it down. Scrub it with a bathroom brush and some dawn dish soap. Then rinse very well. Let dry either in the sun or inside under a fan out of humidity. After this you may need to apply a light coat of oil or condition the leather. It really dries it out.
