As mentioned already San Antonio. Ft Worth is also lots of fun. The Texas hill country is also beautiful. Llano has the bald eagle viewing and enchanted rock is nearby.
Keep in mind summer is really hot in Texas. We have great spring and fall weather.

You are going to have to be more specific- TX is a really big state. What part of TX do you think you want to visit? Will you be bringing your own horses? I am proud to be from Texas and will help you out all I can, I personally love the Bandera area. Its close to San Antonio so you get all the old west, rodeos , river rafting and for not to much of a drive all that San Anton has to offer LOVE the river walk.

We wont be bringing our own horses, we will be leaving them at home. I guess the old west interst us the most and since we are from PA we are yust to the weather being in the low 90's with high humity. We want to enjoy our stay so I am thinking about this fall coming down. We are a out door type family so anything out door is what we would enjoy doing. We live in a very rural part of PA with lots of woods and farming land around us. We want to visit a historic place as well.

Well, west Texas is usually dry and windy. If you go near Amarillo, I would recommend seeing Palo Duro Canyon. It's the second largest canyon in the US. The farther east you go, the greener it gets and taller the trees. East Texas includes rolling hills of forests and grasslands. The hill country which is central Texas, is pretty. San Antonio is a good vacation spot because of the Alamo, river walk, sea world, and New Braunsfels is right next door. Here you can rent tubes and float down the river. Galveston is a big vacation spot as it's on the beach. Lot of options. Hope you enjoy your trip!

Edited to say: King Ranch in south Tx or the Alamo are good historic sites.

Bandera is a nice town and offers lots to tourists (I live there!  ).
From Bandera you can visit San Antonio easily as well as the pretty towns in the Texas Hill Country.  Depending on how much time you have, I would also suggest a trip to Big Bend State Park.  It is about a 7 hour drive from Bandera, but well worth a visit for a day or two.

San Antonio would be my suggestion as well.

Good Mexican food, the missions, the Alamo, plus you have close trips to Bandera and/or Fredericksburg/Enchanted Rock. FYI - "close" in Texas means an hour or so away.

Fall doesn't really start until late September. August is worse than July 9 years out of 10 (in my opinion anyway)!

If you are interested in Texas history. Stop in Waco at the Texas Ranger Hall of Fame.
New Braunfels at schlitterbaun for the kids.
Fredricksburg is awesome, the food and the bat caves are very cool.
San Antonio river walk and the Alamo. and of course seaworld was fun too.
Ft Worth Stockyards are always fun. There is a rodeo at Northside on weekends. ( which is the historic arena that you saw in Pure Country... LOL )
There is also the Natural Bridge Caverns on the way to New Braunfels, very neat.
South Texas is most beautiful in the spring, flowers are amazing.
Personally, I would stay away from the west Texas area, its wind, oil wells and sand... not much there to look at.
East Texas is pretty, Marshall and Jefferson are pretty cool historic towns.
When spring starts, pretty much every small town will have a rodeo of some sort going to.

Try to stay away from the bigger cities such as Dallas and Houston, traffic and too much commercialized stuff to me.

Summer time here can be brutal heat and humidity so I would look at April , May or early June as the best time to visit too.
