I've been spending as much time as possible with my aunt while she still feels good and a few weeks ago she taught me how to can. I made pickled beets and strawberry jam. Were going to spend another day canning and I was wondering if anyone has a good recipe that I could try? I'm fully addicted to canning now and want to try and many different recipes as I can.

I can every year from what we get out of our garden...makes me feel very productive! I love my "Ball Blue Book guide to preserving" book! Excellent tips and recipes included in that. Are you wanting to can hot sauce? We have tried several recipes and finally found the perfect one for us. Lot of work and ingredients though. I'll have to pull it up if you want it.

I'm going to look into that book too. My husband and I are trying to grow as much of our own food as possible and only go to the grocery store for things we can't grow.

What do you like to eat canned wise? We love jalapeno jelly, salsa, pear butter, wild plum jelly, pickles etc.

I like basically everything. I can't do spicy stuff but my husband loves hot stuff. I don't like pickled fish and I can't have anything with apple in it but everything else is fair game. Pear butter sounds amazing!

I'm not a big pear lover and I love it. It's super simple to make. I think the longer it simmers the sweeter it is. I don't add any sugar at all. I don't even bother peeling or coring the pears I just quarter them up, put a little water in the bottom of a pan and let them cook down some. Then I run it through my food mill, put it in the crock pot with a couple cinnamon sticks and let it simmer for 2-3 days then can.

No one taught me either. It was a lot of trial & error and YouTube. I remember the first time I made strawberry jam the pot boiled over and caught on fire.

Best Hot Sauce recipe we've tried. My husband likes jalapeños and anything extremely hot...I'm opposite. Think this is just right on level of heat but if you like hot stuff can add more peppers. We can a year's supply of this every summer and man, it takes a lot of tomatoes and work.

4 quarts chopped tomatoes (put whole tomatoes in boiling water for 2 min, submerge in cold water bath, making it easy to then peel and dice up)
1 quart diced onions
1 1/2 cup chopped hot pepper (we do half jalapeño and cayenne)
2 large bell peppers chopped
2 T garlic powder
1 T cumin
2 T black pepper
1 1/2 T ground red pepper
1 1/2 T crushed red pepper
2 T sugar
4 T salt
1/2 cup vinegar

Cook all ingredients together until desired consistency (30 min)
Put in hot jars and hot water bath for 15 minutes.

Edited to say sometimes I throw in some cilantro and chili powder.

My aunt can make anything and I'm very fortunate that I have some time with her still where she feels up to it. She made me a huge cook book too with all her recipies.

We can sooo much stuff...I wish you hadn't said you can't have apple because we have almost every kind of apple recipe for canning (apple butter, apple pie filling, etc.) that are really good. The problem(s) with our recipes is if I gave it to you I can be exact on any measurements because we either change something or double or triple the recipe. 

But you name it, we probably have a recipe of some kind for it and we'll gladly share!
