So I purchased a Crown C 8.5 inch Gullet. I tried a professionals 8.5 inch gullet (With her help) and it fit perfectly on my horse.

The bars seem to wide and causing some shoulder issues, he has large shoulders but is high withered

One person suggested the only saddle that will fit him is going to be flex-tree.

I would appreciate suggestions on saddle pads that may help..

Thoughts on biofit pads

I personally didn't like the Biofit on my horse when I bought (and still have) my saddle that the gullet was a little too wide. BUT, I loved Impact Gel's Build Up pad. Was able to try it before I bought it and was a little pricey but it's been aa year now since I bought it and the build up hasn't smushed at all and it still fits my horse pretty well.

I thought if you have a Crown C you're supposed to shim it.

you shim a crown c if its too wide.  supposedley their muscles will fill back in after you get a saddle thats wider, but mine never did.  Get some shims, fleece or even a hand towel and put it under the saddle where the front conchos are and when the saddle is on, push down on the saddle horn until the back doesnt pop up.

Yes you'll definitely want to shim it. It takes a little while, but he should eventually fill in some. For the first year and a half with my 8" gullet Crown C I used a 3/4" felt pad and a sheepskin shim. For a little while I kept that pad but laid my shim flat instead of folding it. Now I only use a 1/2" felt pad, but I still shim it with it folded over. You just have to be ready to adjust padding and shimming as your horse's back changes.

The csi pad will help keep the saddle from pushing down on the wither.

I have two crown c saddles and have 3 horses I ride in those saddles all the time, one is a 10 gullet when fit, I don't shim and use a csi pad, the other two ride in an 11 gullet I found a wool shim with a csi pad works the best on them.

I like the csi pads more then the 5 star as they are more contoured to fit withers, I have never had to reposition my csi pads either, I have never had one push down on the wither.

I will order some shims, and see how that works.

I love my Crown c saddle, but my horse comes first.

I have CSI pad but I do not think I have been it on correctly, I may have my saddle and pad to high on the withers.
My CSI pad has 1/2" liner may need to order a 3/4" liner

I will experiment with shims and moving saddle behind the shoulder.

I don't have a Crown C but a friend does and from reading all the posts about them I think they are suppose to sit behind the shoulders not on them like some saddles (ie Caldwell, PSC, ect..).  Not sure what type of saddles you are use to but may want to take some pictures of the saddle on your horse and post here or send to a Martin dealer and see if you are placing it in the right spot.

Good luck hope you get it figured out.  Saddle fitting is so fustrating!!!!

You can order shims that go with the CSI pad.

I'd buy a thicker pad, and shim it

I have three Crown Cs and I can tell you that they are VERY hard to fit a horse. They are so persnickety that if my horse loses a little bit of weight the saddle no longer fits. I can still shim it if I wanted to, but I have another Crown for a different horse which is a 1/2 gullet width smaller, so I just use that. I don't like to shim.

So to answer your question, yes a gullet can be too wide and in my opinion there is only so much you can shim. If the saddle fits perfect to begin with I don't understand why they have you shimming it.

Also, these saddles are not meant to be placed high on the wither, rather behind the shoulder.

I rode this evening in my Crown C.
I re done my my latigo to the first slot on the saddle, which moved the saddle by behind the withers. (it will be hard to get used to riding far back)
I used my 1/2 inch CSI pad, and used a towel as a shim.
It seemed to help.

I do think I need to purchase a 3/4 inch liner for the CSI Pad.
Does and know if a person can put a saddle blanket over a CSI pad?

Thank you for everyone support and advice, I greatly appreciate it.
