Location: White Mountains of AZ | I'm crazy about leftovers...Hamburgers are nice to just put in a bag with lettuce and have a wrap...Cabbage rolls are good if you have a place to warm them..Sometimes if I'm lazy, I'll grab a pre packaged salad kit from the store and munch on that...But I tend to forget the night before to get my food ready, so I'm always scrambling! |

I need some ideas for healthy meals to take to work, for breakfast and lunch.
Something easy to pack and that can be ready the night before so I can grab it on the way out the door.
What ya got for me!
Easy breakfast ideas ...
Muffin egg cups - Mix up scrambled eggs and add in extra veggies and good things, then in a muffin tin, measure out your mix into each cup, bake, then store the egg cups in a baggie in the fridge. We love to just grab these and eat 'em on the go. They are good cold or warmed up in the microwave quick.
Overnight oats - add oatmeal, greek yogurt, berries. mix well in a plastic bowl with a sealable lid (think tupperware). leave overnight in the fridge, take out and add in crunchy things like nuts or low fat granola - enjoy!
Lunch ideas -
I love the salad in a jar ideas ... I make them the night before. Basically, layer in greens, veggies, low fat meats, nuts, etc into a jar - refridgerate and take to work! I have several of the tiny cups with lids for pre-measured dressing that I will also make up for the week and store in the fridge.
Good Luck!

Who did you go through for the 21 day fix? Is that the one where they want you to buy the shakeology? |

| I love the salad in a jar. So convenient to put together the night before. I also am a HUGE fan soups and stews and tend to make a lot on purpose so I can take the leftovers for lunch; I tend to put those in jars as well (I'm the jar lady at work!).
Wraps are quick and easy. Mediterranean wraps are my SO's favorite and I bet I make them once a week: cucumber, roma tomatoes, romaine lettuce, hummus and grilled chicken strips. |

Location: NM...the Land of Manana | Today I am having sugar snap peas, baby carrots, almonds, dried cranberries, low fat string cheese and a cutie. I feel so full when I am done and it takes me awhile to eat, so I don't feel at all deprived. I keep all this stuff in bulk at work in my desk and a small fridge we have, so I only have to replenish my supply, not plan it out every day. I also keep fiber one bars in my desk for a "sweet". The chocolate bownie ones are yummy! |

Location: SE Oklahoma | I made this tonight ... we loved it and everyone had seconds!! ( I skipped the hot pepper, my kids wouldn't go for that. I added extra lime juice and a little bit of a bbq poultry spice). http://ifoodreal.com/zucchini-noodles-with-cilantro-lime-chicken/
Also, I'm loving this for breakfast lately. I make a batch and split into 3 servings.
1/2 cup toasted steel cut oats (toasting them in a dry skillet makes them so much yummier!!)
1/2 cup milk
1 single serve greek yogurt container. they are like 5-6 ounce containers. I like the nonfat Oikos with fruit. Whatever floats your boat really.
Add some extra berries, peaches, mango ... whatever. I keep frozen fruit handy for stuff like this and smoothies
Mix all together and store in fridge overnight. Delish!
I always have a snack box in the fridge. It has baggies of carrots, apples, grapes, cuties, cheese, almonds, grape tomatoes, celery, etc. in it so I can tell myself "I can have ANYTHING I want from this box!!" It works in my brain, I hate limits. |

I will send you a pm. Yes it is one of the shakeology ones but you don't have to buy or drink the shakeology to use it. You have different sizes of containers for protiens, fruit, carbs, veggies, oils etc. I have a hard time dieting and deniying myself the food I want and am a sweet tooth, but I was able to do this one. It is all about menu planning and having food ready in advance I wasn't hungry I acutally had a hard time eating the amount of food I needed too. It comes with work outs too. But the eating and workouts are seperate. |
