So my sister sprung on me yesterday that mom has to work all weekend, so she wants to have a cookout TONIGHT! I'm off work today, so I got cooking, cleaning, and gathering firewood duty...lucky me ....lol

Anyway, I'm honestly not sure what all I need to cook? I know I'm grilling BBQ chicken and marinating steaks, but I don't know on the sides? So far, I've got 8-10 people coming and 2 of those have had gastric bypass, so I need the menu to include foods that they can eat. I was thinking mashed potatoes and fresh corn on the cob maybe but the folks that have had bypass can't eat corn...so do I add green beans? Squash casserole? Any ideas are welcome and appreciated, especially on this short of notice.

Make a thoroughbred pie!! **** good and not too hard. Also potato salad, most of the times you can buy that pre made, baked beans, green bean casserole, kebabs are easy, baked potatoes...

You would really need to find out what the folks that had gastric bypass can/cannot eat.  Each one is different and
each one has their own special trigger foods.  It's a crapshoot.
Otherwise, I'd stick with the suggestions made; baked beans, potato salad or stewed potatoes, slaw.  The good old
standbies.

Grilled squash and zucchini.  Yum!  We just slice, put in aluminum foil with salt and pepper and some olive oil.  Close foil loosely and put on grill.

We love jalapeno halves stuffed with cream cheese and wrapped with bacon. But that may not be okay for gastric bypass.

I remember the year some of our friends fed a few of those to our dog and what the inside of our truck looked (and smelled) like after we got back out to the truck from eating dinner (it was dark so we put him inside out of the weather while we went inside). A spray gun couldn't have done a better job. We had to leave the windows down for weeks to let the truck air out lol.

They are really good. Just don't feed them to your dog . . .

Well, thought I'd give you guys an update!

I grilled t-bones, ribeyes, New York strip, and BBQ chicken. I made homemade mashed potatoes, squash casserole, asparagus, corn on the cob, fresh rolls, homemade strawberry shortcake, and s'mores. Lol I went all out. We will have leftovers for 2 weeks! Lmbo
