How did you cook the pork chops? I have some thick center cut and can never cook them to be tender? |

The pioneer woman website is my favorite place to find new recipes! All her stuff is GOOD!
I hate her new website because it's so hard to navigate but I have 2 of her cookbooks. Love that her recipes don't use ingredients I have never heard of and would have to take a boat to India to get!
Last night, I fried potatoes and onions and grilled German sausage out on the grill along with some baked beans. |

Lol, I can relate. My oldest daughter is an excellent gourmet cook. When she lived out of town she would send me her grocery list so she could cook for the holidays. It took me forever because I didn't have a clue what most of it was, didn't even know where in the store to start looking, Google was my best friend, boy was deliscious though. |

You will love it!! I'm not sure if you found a recipe you like, but the one I have has worked out great every time!
Chicken Gnocchi Soup
3-4 Chicken breasts diced and cooked (I use 3)
4 cups chicken stock
2 cups half-and-half
1 stalk celery diced (I skip this)
1 garlic clove chopped
1/2 carrot chopped
1/2 onion diced (I use a sweet onion)
1 cup fresh spinach chopped
1 tablespoon olive oil
1 teaspoon thyme (I have used this and sometimes I don't- I like less)
Salt and pepper to taste
16oz potato gnocchi
1 tablespoon cornstarch (if needed)
1: Cook chicken
2: Saute onion, celery, garlic, carrot in oil over medium heat until onions are translucent
3: Add chicken, chicken stock, half and half, salt & pepper, thyme. Heat to boiling, then add gnocchi. Gently boil for 4 min, then turn down to a simmer for 10 min.
4: Add spinach and cook for another 1-2 min until spinach is wilted
***Heat to boiling and add cornstarch dissolved in 1-2tablespoons of water at this point if you want a thicker soup***
Enjoy! :) |
