What is the best brand and place to buy stall mats? I'll be using them as portable mats for barrel races and rodeos. Is there a certain thickness that works best? Any tips or advice would be greatly appreciated.

Google "interlocking mats for kids".  I have seen many use these as they are light weight and easy to handle. You can then put your shaving over them.

If you get these, make sure they are heavy duty. Iv walked by stalls at barrel races with those mats (the cheaper version im sure)thrown everywhere in the stall and the horse standing back on the concrete.

I bought the interlocking mats at Walmart in the gym section. They held up really well at a 3 day barrel race and my horse acted a FOOL. Rearing up in the stall and carrying on. Of course, I am a fiend about shavings and he had plenty of shavings on top of the mats. Only thing was there was they didn't fit from wall to wall, but like I said, I bedded him down in a lot of shavings. He didn't tear them up and I was able to take them back home to reuse.

I am glad to hear that the Walmart mats are durable. My horse can be a little wild sometimes as well.
