 Oh yeah I forgot about Diego! That place is really good.  Just go there for dinner though because there off hour menu is dissapointing.

Im wondering if Benny Binions is open again downtown? It had a great $5 prime rib special everyday all day.
Lawrys (the season salt folks) have a nice restaurant a block off the strip that is awesome- they have old time Christmas carolers during the holidays- if that is your thing.

 Cheesecake Factory in The Forum Shops at Caesars is my absolute favorite. I like Coronado Cafe at  South Point. There's a good place called Prime something there too. Bellagio buffet is good. Sidewalk Cafe at Ballys was good the last time I ate there.  Tejas de Brazil is good but expensive. 

Anyone have any good suggestions on sushi or hibachi?

Just got back from Vegas last week. We ate all over but I love going downtown to the older casinos to play. We ate at the best steak place and that was at Binions steakhouse. It is the top floor thru the casino via a special glass elevator. Beautiful view from the top and a reasonable priced tasty steak cooked exactly like you order it. A true taste of old Vegas that everyone should experience at least once.

The best buffet I've had in LV was at Bellagio.
The best steakhouse was STK in the Cosmopolitan hotel.
I haven't been out for NFR in years but when we used to go with a group, we would always have dinner one night at Hugo's Celler at the 4 Queens. It's like an old school supper club.
Lucky's 24-7 at the Hard Rock Hotel has a $4.99 steak and egg special-you have to ask for it, it's not on the menu.
Secret Pizza at the cosmopolitan is also awesome!

I'm going, and I'll take any of your suggestions.  I like Italian, Mexican, steak, sushi, seafood, ... I love a restaurant with a good wine selection.

Ellis Island Casino and Brewrey. Guys loved the craft beers and the food was AWESOME. We also LOVED the buffet at Sam's Town, so much better than on the strip and more reasonably priced. We always make it a point to hit up The Grind (located off the strip on the Blue Green resort property between the MGM and the Thomas and Mack) for the most kick ass burgers ever. Hubby and I love Toby Kieth's too, get a Toad Stuck Pond drink and the Fried Mac N Cheese for an appetizer. I was bamboozeled off of one drink (they're huge) and it was SO good. (and I can DRINK..LOL) The buffet at the Luxor was the best one that we had on the strip, but it was nothing fancy.
