A couple of super easy ones:

Dirty rice casserole.  Buy the dirty rice in a box, cook it, add browned ground beef and bake with some cheese on top. 

 

Taquito casserole:

One box chicken or beef taquitos - lay them out in a 9 x 12 casserole.

1 can cream of mushroom, 1 can green enchilada sauce, 1 can Rotel.  Mix all together and cover the taquitos. 

Cook at 400* for 25 minutes. Add cheese on top and cook another 5 minutes.

Make stuff. Boil some elbow macaroni, brown some hamburger meat. Mix elbow macaroni, hamburger meat, and a can of rotel together. Add salt to taste. Three ingredients (four if you add salt). Takes 10 minutes.

French bread pizzas are fast. Get presliced french bread, add spaghetti sauce on top, then just add toppings (we usually do mushrooms, olives, onions, bell peppers, and pepperoni) and cheese. I buy everything prechopped at the grocery. Goes in the oven at 375 for about 15 minutes. And servings are already set. This takes maybe 20 minutes

If you have an instant pot or crock pot, you can make crack chicken. Put four or five chicken breasts in about 1 cup of chicken broth. Add a block of cream cheese, bacon pieces (I just use the salad ones), and one ranch seasoning packet and cook four to six hours. Stir a couple times to help the cream cheese get melty. When the chicken is done, shred it, add it back to the cream sauce and add shredded cheddar cheese, about a cup, Stir it all together and done.

Dont know if it's been recommended but get an Instapot! I recently got one and I think I've used it almost every day lol! So easy for me and fast! Especially with my 2 boys in baseball and my daughter in varsity cheer.. I'm always on the run. Theres literally thousands of instapot recipes online and it's super easy and fast. I made beef and broccoli last night in it.. so tasty and the meat is always tender!

We meal prep every week. Most of the time for lunch and dinner!

My favorite go to lately has been a keto cheeseburger casserole. I add my own touch like adding pickles on top and then adding lettuce, tomato,  and avacado once were ready to eat. I make a double batch so that we can have lunches or dinners all week. I'm too impatient to measure and I eyeball everything so this is super quick to throw together and a plus is, not many dishes are used!!

I don't have a name for this but tastes great and is just one pan- I buy the frozen/already cooked fajita chicken strips. Heat those up in a pan, then add some salsa, black beans, shredded cheese, etc. Last night I did diced tomatoes and green chiles too, then eat it either in a wrap or with tortilla chips. Started that when I was broke in college but it's SO easy and good!

One of the easiest things to me, is taking meat (chicken, ground beef, pork, etc) and whatever frozen veggies you want and add soy sauce; wallah you got stir fry. Lol. If you want to add red pepper flakes and stevia then it’s really good and still low carb!

My hubby and I are also doing keto now. Most of our meals are not simple though. I cook constantly but we are so much healthier. He has lost almost 50 lbs and I have lost about 30. The diet has been awesome for my migraines. But if y’all want some amazing blog or cookbook recommendations I have tons. The Southern Kero cooking and Comfort Keto Cookbook are my favorites. I love the All Day I Dream I Dream of Food blog too. This diet has really stretched my kitchen skills but I have learned sooo much from it and can make just about anything now. :) Our favorite quick meal though is instapot Crack Chicken. It rocks

One of my favorites is chicken breast, BBQ sauce (I use Sweet Baby Ray's), pineapple juice, and brown sugar in the croc pot.  Cook on low for 6-8 hours.  It shreds like magic with a hand mixer.  You then have BBQ sandwhiches, wraps, nachos, etc.  It heats up really well.

We rope/rodeo quite a bit, and I drive an hour one way to work.  What I usually do is something in the croc pot, or I'll check the weather and pick a night that it's supposed to rain and cook something that makes lots of leftovers.  Enchiladas warm up well.

Frozen pizza in a pinch is awesome, lol.  I preheat the oven on the way to my shower, hubby sticks pizza in, then I take it out while he showers.  We have our system down.  

One other option--I buy precooked Tyson spicky chicken patties.  They take 1.5 minutes to heat up in the microwave.  Put them in a tortilla with some shreeded cheese and sauce of your choice and they taste REALLY good.  

We eat a lot of soup in the winter and sandwhiches in the summer.

OK ok....you talked me into cooking it tonight!!! My babe just grilled some chicken last night, so ill have to improvise a bit but I'm so excited for dinners this week now LOL.
