Ok - easy enchiladas - the SO is not a fan of beans so I use rice in most of my mexican dishes :)
This is easily doubled and can make a literal ton pretty quickly.
1 lb ground beef (drained of fat) - cook well on stove top in diced onions, mashed up garlic cloves, your favorite peppers diced, salt and pepper. (optionals - jalapenos!!)
1 box spanish rice
1 can rotel (I like the spicy/hot kind)
1 bag ( 6-8 cups works best) of sharp cheddar cheese
1 large can/ jar of enchilada sauce - I make my own - this is the recipe and it rocks ( http://asimplepantry.com/2014/10/recipe-for-enchilada-sauce.html)
1 bag of large sized soft tortillas - I like flour but it works just as well with the corn ones
9x13 oven safe pan
cook the beef in the onions, garlic, and peppers - drain well and place in a large bowl. At the same time - cook the spanish rice with the rotel until tender. In the large bowl with the beef, add the rice, cheddar cheese - mix well. Heat oven to 400. Spray pan liberally with oil. grab a tortilla, spoon in the fixin's from the bowl and roll into an enchilada type shape - leave your ends open (this is not a burrito). Place it in the pan and continue until you have used every tasty morsel up. Then pour the enchilada sauce over the top - sprinkle more cheese on top too. Cover with tin foil and bake in 400F oven about 30 mins - or until cheese and sauce is bubbly on top.
Here's the great part - When placing the enchilada's in the pan ... you can separate them with tin foil. Make a "U" shape with the foil, place the enchilada in it and move on to the next one. This makes for easy individual removal from the pan for taking to work, separating, freezing etc. Or you can just cut 'em out as needed from the pan too. We have done the tin foil thing to separate them out, then store in the gallon zip lock bags wrapped in the tin foil and the SO just grabs how many he wants and goes :)

Tequila Christmas Cookies:
1 cup of water
1 tsp. baking soda
1 cup of sugar
1 tsp. salt
1 cup of brown sugar
1 tbsp. lemon juice
4 large eggs
1 cup nuts
2 cups of dried fruit
1 bottle tequila
Sample the tequila in a large glass to check quality.
Take a large bowl, and check the tequila again, to be sure it is of
the highest quality. Pour one level cup and drink.
Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl.
Add one teaspoon of sugar. Beat again.
At this point, itβs best to make sure the tequila is still OK, so,
try another
cup.
Turn off the mixerer thingy.
Break 2 leggs and add to the bowl and chuck in the cup of dried fruit.
Pick the frigging fruit and the damn cup off the floor.
Mix on the turner. If the fried druit gets stuck in the beaterers, just
pry it loose with a drewscriver.
Sample the tequila to check for tonsisticity.
Next, sift two cups of salt, or something. Check the tequila.
Now shift the lemon juice and strain your nuts.
Add one table.
Add a spoon of sugar, or somefink. Whatever you can find.
Greash the oven.
Turn the cake tin 360 degrees and try not to fall over.
Donβt forget to beat off the turner.
Put the bowl through the window, finish off the booze and make sure to
put the dirty stove in the dishwasher.

and here is my mexican corn recipe..i dont know where i got it from but i get asked to bring it to a lot of potlucks.....and you can quadruple this pretty easy, and u can also crockpot it or use the oven or stovetop, whichever you have time for
i can kernel corn (drained) chopped red and green peppers(as much as u like) 1/2 a block of cream cheese...... put in pot and cook

I have started taking pictures of them and uploading to my Pinterest boards! I always use Pinterest for 80% of my cooking and it's less paperwork I have to keep up with!!
I always use ground chuck when making meatloaf... any keys to keeping the venison from drying out too much when using it for meatloaf? I don't know what I'd do if I didn't have grease to drain out! lol! |

fry up and drain the grease on your favorite ground sausage 2 lbs. i use a spicey one. cube up 6 lg potatoes. I leave skin on but its your preference. bring to rolling boil. cook to a soft but not falling apart consistancy, then drain off the water. open 3 cans of carrots or throw in fresh ones with the potatoes. (drained) combine all ingrediants with three cans of stewed tomatoes, 3 tsp butter and one cup of sugar simmer, simmer, simmer and serve with your favorite biscuts and jelly. (buttermilk grands and rasberry jam for me) you can add onion or peppers to taste also. |
