You are right you cannot ride(physically) papers. You can however to some degree prove a value with them by verifying age, parentage, and quality of lineage. You cannot saddle up a set of papers. You can secure insurance for a papered horse a heck of a lot easier. You can ask a certain price for a horse based on like bred horses performance records and industry trends.
