off the strip are amazing places to eat.... right by the hard rock is Firefly's... tapas style and reasonable... very good
Steak is by far the best at Twin Creeks and it won't break the bank...
Italian is hard cuz there is a lot... Pano vino off of sunset always does a good meal

I agree on avoiding the chains but Im a restaurant lifer thru and thru.
There are some chains however- like HBLVR mentioned Ruth Chris- that many folks dont have access to where they live-so I understand the need to try them. And chains are usually successful because they do things right.
I think the draw for many people on buffets is to be able to try several things and not all of the buffets are bad. If there ever is a great one- I think it is in Vegas for sure. The trouble is in an attempt to keep things on the cutting edge- these places change restaurants and buffet items frequently so it is really hard from year to year to have much to go on for word of mouth.

I have found that the food anywhere on the strip is expensive, however, if its not a buffet, as in ordering off the menu, ya get so much you can split it! such as with the volcano nachos at JB Margaritaville!! We also found a cheaper buffet down on Fremont street, I believe it was in the Fremont hotel, we really enjoyed it and it was not way overpriced either.
