Anything in the crockpot is a win for us.  I like to throw a bunch of boneless skinless chicken breast (frozen or not) in the crockpot with some chicken broth, garlic powder, onion powder, whatever seasonings.  I am not sure how long to cook, depends on your crockpot and which setting.  But cook until it shreds easily.  I like to do a bunch and then have it for the week.  We use it as is for salads or added to quesadillas.  Heat up with some salsa for chicken tacos, heat with BBQ sauce for pulled chicken sandwiches, add a bag of frozen veggies or chop up fresh and have stir fry.  If you dont' mind being locked in on seasoning, you can cook right with a jar of salsa or BBQ sauce.  Also good with italian dressing in the crock pot.   We do the same thing with pork loin.  It goes on sale a lot for $1.99 a pound and is super tasty.

I love these ideas - my husband and daughter are picky so I tend to get stuck with the same rotation of stuff. Two of my favorite easy meals are Taco Casserole and Frito Salad. Not healthy but delicious! 

Taco Casserole

- Grease 9x13 pan and unroll Pillsbury crescent rolls out to cover the bottom

- Bake at 350 until golden 

- Brown ground beef and make with your favorite taco seasoning

- Layer sour cream, ground beef, beans (black or dark kidney or refried), salsa, and cheese

- Put back in the oven to melt/warm

- Pull out and top with tortilla chips 

 

Frito Salad

- brown ground beef

- drain a can of dark red kidney beans

- create a salad with iceberg lettuce, ground beef, beans, cheddar cheese, and fritos

- top with Catalina dressing

*This is my mom's recipe. She likes to mix everything up and then serve, but I prefer to layer and mix it on my plate so leftovers stay fresher.

This one was a WINNER with my husband (who is very picky and always says he hates chicken on a bone....well all I had was a whole chicken, so I searched a recipe and I found out the next day  he truly thought my chef-skilled father had brought food over, again, when I told him I'd gone barrel racing and there was dinner in the oven  lol ) It has a very cool presentation and SOOO easy!

 

OVEN ROASTED WHOLE CHICKEN AND CABBAGE

  • 1 4-4.5 pound whole chicken
  • small yellow onion chopped
  • 2 tablespoons fresh parsley
  • 1 tablespoon butter melted
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1 medium cabbage core removed, chopped into large pieces
  • 2 tablespoons butter melted
  • 1 tablespoons olive oil

Instructions

  • Pat chicken dry with paper towels. Remove giblets package if inside chicken still. Fill chicken cavity with chopped up onion and parsley.
  • Rub 1 tablespoon butter all over the chicken.
  • In a small bowl mix salt, pepper, paprika and garlic powder together. Sprinkle on chicken, inside and out, patting the seasoning on chicken so it sticks.
  • Place a 12" well seasoned cast iron skillet on middle rack and preheat oven to 425 degrees. If you don't have a cast iron skillet you can also use a roasting pan.   
  • In a large bowl toss cabbage with 2 tablespoons butter and 1 tablespoon olive oil so it's completely coated. Season with salt and pepper.
  • Once oven is preheated, remove cast iron from oven and place cabbage on bottom, patting it down. It might seem like a lot of cabbage but it will wilt down significantly. Place chicken in the middle of skillet, on top of cabbage.
  • Put in oven and roast for approximately 50-60 minutes, or until the thickest part of the chicken (I usually check the breasts) is 165 degrees.
  • Remove from oven and allow to cool for 15 minutes before carving.

Award Winning Washington State Apple Chili

Two Tablespoons Olive Oil

One medium-large Walla Walla Sweet onion, diced

One Medium orange bell pepper, diced

One Medium yellow bell pepper, diced

Four cloves garlic, chopped

1+ pound stew meat, small pieces (brown)

One pound Italian sausage, Jimmy Dean (brown)

2 Tablespoons chili powder

½ teaspoon Paprika

½ teaspoon Cayenne Pepper

One teaspoon salt

Two Tablespoons ground cumin

One Tablespoon dried oregano

Two, 8 ounce can tomato Sauce

1 cup fresh  Apple Cider

One 28-ounce can diced tomatoes

Two 15-ounce can black beans, drained and rinsed

Two 15-ounce can Kidney beans, drained and rinsed

Two 15-ounce can pinto beans, drained and rinsed (Optional)

Two  Honey Crisp apples, diced (Add the last 30- 40 minutes of cooking so apples will be crisp)

Three years ago I made fresh tomato soup from scratch.  I hate canned veggetables and canned tomato soup!!!

I grew the tomatoes and didn't know what to do with the extra tomatoes so I decided to make Tomato soup.

I don't have a recipe but it was tastey.  My last one was in the freezer for 3 years and nuked it tonight and it tasted like the day I put it in there.
