Would it be inappropriate to submit a letter that is two years old? I have a letter from a former boss that I would like to submit and I can't get it updated in time because he is on vacation. Do you think it would be detrimental to submit a letter that old?

No it would be perfectly acceptable. I got a LOR from every employer Ive ever had for future resumes and also from all my undergraduate professors for my law school admissions. None of which were current by the time I actually submitted or had to use them.
(Like YEARS after they were drafted
).
Not sure what you are using it for but whatever the reason, anything you submit will be stronger WITH it than without it. You have to separate you from the others and the LOR may do just that =
