I think it depends on your hands. My hands are really light and I like to use finger pressure, so I prefer more gag so I have more delay and a chance for them to respond before getting the full leverage. Some horses prefer to have little to no gag for a quick response and release. I have a huge collection of bits  (lots of Dave Elliots) to accomidate which horse I am riding. My main concern is more about how much lift I need, which is your purchase on the bit, the gag just has to do with how light my horses faces are and how I want them to respond to my pressure.
