Just got my first bags of the Omnis cubes. They chowed down on them and my older gelding (25) didn't seem to have trouble chewing them. But a question I have is they seem to drool more when eating them. Is that normal?

That would be a good thing. The more they chew, the more saliva they make. This can help in limiting ulcers as that is one of the horses natural buffers for acid produced constantly in the stomach.

As posted above, saliva in horses is produced by chewing. The results I have seen and reports by others is that Omnis is chewed on really well and salivation is common and higher than many other feeds. So yes, elevated saliva is normal.

Saliva lubricates the mouth and esophagus (think choke), starts the digestive process (especially starch), and is alkaline in nature, helping buffer stomach acid and reducing ulcers.
