Would 20 days of omeprazole be enough to cause a horse to be slightly anemic?

No, Omeprazole should be used to cure ulcers and preventative. Omeprazole should be cycled on and cycled off as needed. Also remember never take a resting horses blood for red blood cells as gospel truth. A large amount of red blood cells are stored in the spleen as needed in exercise. Always be building a horses red blood cells when on omeprazole and off omeprazole!

I would say no.
We do take horse's resting blood samples for PCV. They shouldn't be anemic even though they sequester blood cells in the spleen. They should have enough blood cells in resting circulation to have a normal red cell count, and resting values were how the normal range was established.
