I've spent the past 1/2 hour looking at this guide: http://saddlemakers.org/id193.htm and I'm still not sure which route to go.
Any ideas with where I should start? As far as getting him fitted goes, I don't live in a horsey area. There's one saddle shop that I know of about an hour away... I have a regular Robbie that rolls and a wide C3 that rolls really bad. I want to spend around $2k on something used.
He's coming 5, and he weighs 980 lbs and is probably 14.1 at most.

I had a mare that was built very similarly. I have a Coats saddle that fit her. I had the Coats saddle made 5 or 6 years ago and had it built specifically for my wide, mutton withered horses. I have now had two that were built like that.
What type of saddle pad/blanket are you using? Like the thickness and brand.

That's exactly what I'd did. It's not a "wide" saddle but it fits. Never rolled. It has a dropped rigging and doesn't move no matter what I put it on.
One of the biggest problems I see with saddle fitting is too much focus on the gullet when it should be on the bars. A lot of people also associate mutton withered as being wide which is not always the case. I have had custom builds before, saddle and pad. I don't haul like I used too and a commerical off the shelf older demo crown c fits my mutton withered mare really well. The bars are flatter, adjustable rigging helps and the gullet is 6 3/4. I use a flatter 3/4 wool pad and an alpalca wool cinch. No roll, no cinching her up until she turns blue.
If you are looking for a custom build I have to agree on Coats, they are amazing. Another option if you are looking for a commerical off the shelf built saddle, try out friend's saddles or other barrel racers with horses that have a similar build. Haul to some of your larger D barrel races where they have saddle vendors. Most are more than willing to help you. Once you drill it down that way, then you can start shopping used and what brand.
